“Kassia Bowl”

This is a classic creation of mine. Its multiple layers are packed full of nutrition, vitamins, minerals, fibre and an abundance of pleasing textures & flavours.

The Necessities

1 cup Organic Quinoa

11 1/2 lbs of ground Bison, Lamb, Beef or Turkey. You can also use organic boiled Eggs. Alternatively you may choose to omit the animal protein and prepare a vegan dish.

1 can Organic Black Beans

1 1/2 cups chopped Romain lettuce or Field Greens

1 cup chopped Organic Cilantro, Parsley and Dill

1/3 cup chopped Sundried Tomatoes

1/2 cup chopped Organic Yellow Onion

2 cups chopped Organic Broccoli

1 organic Avocado diced into cubes

34 Organic Green Onions chopped up

Sheep Feta

Coconut Oil

Favourite Dressing

Organic Olive Oil

Organic Lemon

4 cloves of Organic Garlic, grated

Salt and Pepper

Rinse & chop up lettuces, herbs and green onion.

Bring 2 cups of salted water to a boil. Pour in about 1 tbsp of olive oil.

Once boiling add in 1 cup of Quinoa. Bring to a boil for about 1 minute, stir and reduce heat to a simmer, with lid on. Quinoa takes about 15 minutes to cook. Remove from heat and fluff with a fork. Keep the lid on.

Place 1 tsp of coconut oil into a pan and bring to medium heat. Once pan is hot, place the ground meat of your choice along with chopped onion into pan. Allow the meat to cook.

Strain & rinse the entire can of black beans thoroughly.

 Next add in the chopped broccoli & rinsed black beans.

Toss on the diced sundried tomatoes & let this mixture cook on a low to medium heat while you prepare the dressing.

Favourite Dressing

Grate about 4 cloves of organic garlic.

Squeeze the juice of one or two lemons depending on how lemony you want the dressing to be, into a small jam jar. Remove any seeds. Add the grated garlic and pour in olive oil. 1/3 of the mixture should be the lemon juice and the other 2/3 the olive oil. Salt and pepper to taste.

Putting it all Together

Place a handful or more of the lettuces & herbs in the bottom of the bowl. These will make up the base or first layer of this dish.

Next comes the Quinoa. Scoop about a cup of cooked quinoa onto the bed of lettuce and herbs.

The meat, bean and broccoli mixture make up the third layer. Scoop desired amount onto the quinoa.

Then top this with some of the copped up green onion, avocado & sprinkle with Feta cheese.

The final layer is the dressing. Shake the bottle vigorously making sure all the ingredients are mixed well and pour desired amount over the top.

Find a comfortable place to sit, back straight, both feet planted firmly on the ground, take a deep breath & enjoy!! Remember to chew thoroughly as you will want to optimize digestion and absorption as each bite is fully loaded and rich in cellular supporting nutrition.
