Each of these little bites are full of Good Fats, Protein, Fibre and Antioxidants. Very quick and easy to prepare, no cooking required and can be eaten for breakfast! Satisfy that chocolately baked good craving minus the gluten and white sugar. They pair wonderfully with coffee, blueberry, ginger or peppermint tea.
2 1/2 – 3 Scoops Protein Powder – You can use Whey or Brown Rice Protein. They seem to work the best, I typically use unflavoured.
4 Tbsp Raw Organic Cacao Powder
1/2 Cup Organic Coconut OIl
1/2 Cup Organic Nut Butter – Almond, crunchy or smooth, Hazelnut, Cashew, Sunflower.
1 – 2 tbsp Organic Raw Honey
1 – 2 Tsp Organic Cinnamon
3 Tbsp Organic Flax Seed Meal, or freshly grind your own.
3 Tbsp Organic Hemp Seeds
Organic Shredded unsweetened Coconut
Organic Maca Powder
Organic Cacao Nibs
Organic Goji Berries
Organic Dried Currents
In a medium sized bowl mix together Coconut Oil, Nut Butter and Honey. Then add in all the other ingredients. You want the mixture to be more “dry” than moist. If too moist add more Flax Seed Meal, Cacao Powder, Protein Powder or all three.
Once you have everything mixed together and at the right texture and taste you will then start rolling them into balls with your hands, about the size of a cat’s eye marble.
On a separate plate pour about 1 cup of the shredded Coconut.You will have to add more as you get through the mixture.
Take each ball and roll it in the shredded Coconut completely covering each one. Place the coconut covered bite onto another plate and continue this process until all of the mixture is gone. Place the finished coconut covered bites in the freezer for about 7-10 mins. This will make ensure they keep their shape. Then take out of freezer and keep refrigerated. They will soften and lose some of their shape if left at room temperature for too long.
